I have more than 30 years' experience within various sectors of the food industry, working for a number of major food manufacturers in the UK and mainland Europe, including several "blue chip" food companies. Most of this experience has been in process and new product development at senior level, and all in a "hands-on" role.
Much of this experience has been gained in the UK poultry industry, well known for its lead in process and product innovation. I also have considerable experience in the fish, vegetable and ready meal sectors.
I am an acknowledged world expert in cooking technology, using both new and existing processes, and have designed and developed the technique of dewpoint control advanced cooking technology, which has led to new levels of food safety, yield and quality improvement. My expertise in cooking technology and cooker design has led to my involvement as an expert witness in legal challenges worldwide.
I am also widely known for my expertise in forming, coating and frying processes and equipment, having worked with all of the principal manufactures of process equipment in this area. A large part of this work has been in Europe and the United States, adding to my knowledge of "world class" manufacturing techniques. I have a close working relationship with equipment manufacturers, which is invaluable when my clients need accurate, cost-effective machinery selection for their individual needs.
My approach to process innovation is a combination of knowledge gained over many years, combined with lateral thinking to give genuine technology advantages over competitors.
I am also skilled in process measurement and improvement techniques, which is an advantage where capital investment is limited, but cost effectiveness is paramount. This skill is put to good use in production management, where modern management techniques can be demonstrated and trained to all levels of production staff.
I have worked closely over a number of years with the "Big 3" fast food chains, namely KFC, McDonald's and Burger King, and major retail outlets including Tesco, Sainsbury, and Marks & Spencer.
